Last week, a friend taught me how to make a favorite local snack food called Korukatta (or something like that). It is little balls made of rice flour filled with coconut and Jaggery (like brown sugar). Almost everything they eat here has coconut and rice in some form. So I had to laugh when, as we were grating the coconut, my friend told me about her Muslim friend. She said, "The Muslims, they eat sooo much coconut and rice." We had a great time making the balls, which tasted wonderful. I do love fresh coconut! Wish I had a picture for you.
